ginger & soy dipping sauce

4 tblsp Kikkoman soy sauce
4 tblsp mirin
4 tblsp sake
1 tblsp grated ginger

Put the soy sauce, mirin, sake and ginger in a small pan.

Simmer gently for 5 minutes.

Remove from the heat and mix in 4 tablespoons warm water. Leave to cool.
