chilli jam

4 red chillies
2 inches root ginger, peeled
2 Kaffir lime leaves or juice of 1 lime
2 cloves garlic
2 tbsp soy sauce
2 tbsp mirin
1 tbsp fish sauce
150g caster sugar

Caramelise the sugar in a frying pan. Blend all the other ingredients. Add to the caramelised sugar, stir. Serve either hot or cold.


good accompaniment to grilled lamb chops
