250g caster sugar
juice and zest of 1 lemon
1 tbsp honey
2 tbsp vodka
Bring the caster sugar and water to slow boil for 3 minutes and allow to cool
Whisk together the buttermilk, lemon juice and zest and honey.
Slowly stir in the cooled syrup and vodka
Process the mixture in ice cream maker. Transfer to container with lid and freeze for a few hours
