mackerel with ginger, soy and sesame – serves 4

4 whole mackerel
4 tbsp honey
4 tbsp soy sauce
5 cm piece fresh root ginger, some chopped and some julienne
2 tbsp sesame seeds
4 tsp sesame oil

Heat grill to high

In a bowl, make the baste by mixing the soy sauce, sesame oil, honey, sesame seeds and chopped ginger.

Season with pepper

Make 5 slashes on each side of the mackerel. Brush each side with the baste and put a little ginger julienne in each slash

Cook under the grill for 3 minutes each side adding more baste if required
