rhubarb compote

100g caster sugar
1 tbsp water
6-8 stems rhubarb, roughly chopped
1 orange, juice and finely grated zest
1 tbsp pastis
2 star anise

In a saucepan, melt the sugar with the water.

Add the rhubarb, star anise, orange juice and zest. Simmer gently for 4 minutes, leaving some shape and texture to the rhubarb

Remove the star anise and set aside to cool.

Add the pastis and stir. Taste for sweetness, adding more sugar if necessary, but leaving it a little tarte.
